Who I Am
I'm Samantha Reed, internationally recognized as one of the world's top pastry chefs and a pioneer in healthy baking.
But my story changed when I was diagnosed with insulin resistance and lactose intolerance. Suddenly, everything I loved — bread, sweets, desserts — seemed forbidden. I tried "healthy" recipes and only found dry textures and soulless flavors.
I refused to accept that healthy had to taste bad.
Today I live in Paris, where I perfected techniques to recreate real crumb, moisture, and flavor — without gluten, without flour, without added sugar, and without lactose.
This cookbook was born from that decision: to enjoy what you love again, without compromise.
